Ingredients:
- 100g of quinoa
- 200ml of water
- 50g of bell peppers
- 50g of carrots
- 50g of broccoli
- 1 tablespoon of olive oil
- Salt to taste
- Pepper to taste
- 1 clove of garlic, minced
Kitchen Tools Needed:
- Pan
- Spatula
- Cutting Board
- Knife
Instructions:
step 1 : You rinse it under cold water to wash off the outer coating (or saponin) and then it gets added to a pot of water. Add water, bring to a boil, cover, turn heat down and simmer for about 15 minutes until water is absorbed and quinoa is fluffy.
step 2 : Meanwhile, while you are cooking the quinoa, wash the bell peppers and chop them, as well as the carrots and broccoli, into bite sized pieces.
step 3 : Add olive oil to a pan and heat on medium-high. Stir in the minced garlic and sauté 1 minute, until fragrant.
step 3 : Season with spices and then add the chopped vegetables. Stir-fry for 5-7 minutes until slightly tender but crisp.
step 4 : Fluff the quinoa with a fork once cooked, and add it to the pan with the stir-fried veggies. But to combine it all: Mix well!
step 5 :Season with salt and pepper to taste, then cook 2 minutes more until heated through, then serve.
