Ingredients:

  • 4 cups romaine lettuce (chopped)
  • 2 cups diced grilled chicken breast
  • 4 strips of crispy bacon (crumbled)
  • 2 hard-boiled eggs (chopped)
  • 1 avocado (sliced)
  • 1 large cup cherry tomatoes, halved
  • ½ cup crumbled blue cheese (or feta)
  • ¼ cup red onion, thinly sliced
  • For the Dressing:
  • ⅓ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional)
  • 1 small garlic clove (minced)
  • Salt & pepper to taste

Instructions:

1.Prepare the Dressing:

  • Add olive oil, red wine vinegar, Dijon mustard, honey, garlic, salt, and pepper. Set aside.

2.Assemble the Salad:

  • Spread out the chopped romaine in a large salad bowl or platter.
  • Top with neatly arranged layers of chicken, bacon, eggs, avocado, tomatoes, blue cheese and red onion.

3.Dress and Serve:

  • Add the dressing over the salad just before serving.
  • Gently toss, or serve as a classic Cobb Salad style.

Tips:

* Use feta instead of blue cheese for a milder flavor.

* Take a shortcut with rotisserie chicken.

* Consider adding a dash of fresh herbs, such as chives or parsley, for added flavor.
