Ingredients:
- 4 cups romaine lettuce (chopped)
- 2 cups diced grilled chicken breast
- 4 strips of crispy bacon (crumbled)
- 2 hard-boiled eggs (chopped)
- 1 avocado (sliced)
- 1 large cup cherry tomatoes, halved
- ½ cup crumbled blue cheese (or feta)
- ¼ cup red onion, thinly sliced
- For the Dressing:
- ⅓ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey (optional)
- 1 small garlic clove (minced)
- Salt & pepper to taste
Instructions:
1.Prepare the Dressing:
- Add olive oil, red wine vinegar, Dijon mustard, honey, garlic, salt, and pepper. Set aside.
2.Assemble the Salad:
- Spread out the chopped romaine in a large salad bowl or platter.
- Top with neatly arranged layers of chicken, bacon, eggs, avocado, tomatoes, blue cheese and red onion.
3.Dress and Serve:
- Add the dressing over the salad just before serving.
- Gently toss, or serve as a classic Cobb Salad style.
Tips:
* Use feta instead of blue cheese for a milder flavor.
* Take a shortcut with rotisserie chicken.
* Consider adding a dash of fresh herbs, such as chives or parsley, for added flavor.
