Homemade Belgian Waffles with Sweet Berry Sauce

For the Waffles:

  • 2 cups (250 g) all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1¾ cups (420ml) milk (whole or buttermilk for more fluff)
  • ½ cup (115g) unsalted butter, melted
  • 1 tsp vanilla extract

For the Berry Topping:

  • 1 cup fresh or frozen sliced strawberries, hulled
  • ½ cup blueberries
  • ½ cup raspberries
  • ¼ cup granulated sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch (optional, if you want a thicker sauce)

For Serving:

  • Whipped cream
  • Maple syrup or honey
  • Powdered sugar

Step-by-Step Instructions

First prepare the berry topping

  1. In a small pot on medium heat, mix together the strawberries, blueberries, raspberries, sugar and lemon juice.
  2. Stir occasionally, and allow it to simmer for 5–7 minutes or so until the berries begin to break down and release their juices.
  3. For a thicker sauce: stir 1 tsp cornstarch and 2 tbsp water into the berry mixture. Let thicken for another 1–2 minutes and voila!
  4. Turn off the heat and allow to cool while making the waffles.

Step 2: Prepare the Waffle Batter

  1. Combine the dry ingredients: In a big bowl, mix the flour, sugar, baking powder and salt.
  2. Combine wet ingredients: In a separate bowl, whisk the eggs and add the milk, melted butter, and vanilla extract.
  3. Combine: Add the wet mixture to the dry mixture and stir gently until just combined. Do not overmix! A few lumps are okay.
  4. Rest the batter for 5–10 minutes for fluffy waffles.

Step 3: Cook the Waffles

  1. Prepare the Belgian waffle maker on its highest setting, preferably using some butter or non-stick cooking spray.
  2. Spoon approximately ½ cup batter (or your waffle maker’s recommended amount) in center of waffle iron.
  3. Shut the lid and cook for 3–5 minutes, or until brown and crispy.
  4. Gently lift off the waffle and put it on a wire rack (not a plate) so it stays crispy.
  5. Continue until all the waffles are cooked.

Step 4: Assemble and Serve
