🥚 Ingredients:

  • 2 large eggs
  • ¼ cup fresh spinach, chopped
  • 2 tbsp feta cheese, crumbled
  • 1 tbsp milk (optional, makes fluffier eggs)
  • 1 tbsp butter or olive oil
  • Salt & black pepper, to taste
  • ¼ tsp garlic powder (optional)
  • ¼ tsp red pepper flakes (optional for a little zing)

👩‍🍳 Instructions:

  1. Whisk the eggs: In a mixing bowl, beat the eggs with the milk, salt, black pepper and garlic powder, if using.
  2. Sauce the spinach: in a non stick pan, cook the spinach in butter or olive oil on medium heat until wilted (30 seconds)
  3. Add the eggs: Pour the beaten eggs into the pan over the spinach, tilting the pan so the mixture spreads evenly across.
  4. Add the feta: Drape crumbled feta over. Heat for 2-3 minutes till the eggs are set nearly.
  5. Fold & Serve: Gently fold over the omelette in half and cook for another 30 seconds, then slide it onto a plate.
