🥚 Ingredients:
- 2 large eggs
- ¼ cup fresh spinach, chopped
- 2 tbsp feta cheese, crumbled
- 1 tbsp milk (optional, makes fluffier eggs)
- 1 tbsp butter or olive oil
- Salt & black pepper, to taste
- ¼ tsp garlic powder (optional)
- ¼ tsp red pepper flakes (optional for a little zing)
👩🍳 Instructions:
- Whisk the eggs: In a mixing bowl, beat the eggs with the milk, salt, black pepper and garlic powder, if using.
- Sauce the spinach: in a non stick pan, cook the spinach in butter or olive oil on medium heat until wilted (30 seconds)
- Add the eggs: Pour the beaten eggs into the pan over the spinach, tilting the pan so the mixture spreads evenly across.
- Add the feta: Drape crumbled feta over. Heat for 2-3 minutes till the eggs are set nearly.
- Fold & Serve: Gently fold over the omelette in half and cook for another 30 seconds, then slide it onto a plate.
- Enjoy! Serve hot with toast, avocado or a green salad.
