- 1 can (15 oz) black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 Expression dry corn (fresh, frozen or canned)
- ½ red onion, finely chopped
- 1 large red or yellow bell pepper, diced
- ¼ cup fresh cilantro, chopped
- 1 avocado, diced (optional, but gusto creamy!)
- ¼ cup crumbled feta cheese (optional, for some tang)
For the Zesty Lime Dressing:
- 3 tbsp olive oil (extra virgin for best flavor)
- Lime juice from 1 lime (fresh squeezed)
- 1 tsp cumin (adds warmth, earthiness)
- ½ tsp chili powder (adds a slight heat)
- 1 garlic clove, minced
- Salt & pepper to taste
Step-by-Step Instructions
Step 1: Cook the Quinoa
*Bring 2 cups water or broth to a boil in a medium saucepan.
*Add 1 cup quinoa, decrease the heat to low, cover and simmer until the liquid has been absorbed, about 15 minutes.
*Take off the heat, fluff with a fork, and let cool. (Helpful hint: Your can spread it out onto a baking sheet so it cools more quickly!)
Step 2: Prepare the Veggies & Beans
*While the quinoa cooks, chop the cherry tomatoes, bell pepper, red onion and cilantro.
*If using canned beans and corn, rinse and drain them.
Step 3: Make the Dressing
*In a small bowl, combine the olive oil, lime juice, cumin, chili powder, garlic, salt, and pepper.
*Taste and adjust seasoning as needed. (Love extra lime? Squeeze a little more!)
Step 4: Assemble the Salad
*Add the cooled quinoa, black beans, tomatoes, corn, red onion, bell pepper and cilantro into a large mixing bowl.
*Spread the salad on the plate and drizzle with fresh lime dressing.
*If using, gently fold in the avocado and feta cheese right before serving.
Step 5: Enjoy!
*This salad is lovely served cold or at room temperature. It’s a great meal on its own, or a lovely side dish for grilled meats, tacos or burritos...
