Step-by-Step Instructions

Step 1: Cook the Quinoa

*Bring 2 cups water or broth to a boil in a medium saucepan.

*Add 1 cup quinoa, decrease the heat to low, cover and simmer until the liquid has been absorbed, about 15 minutes.

*Take off the heat, fluff with a fork, and let cool. (Helpful hint: Your can spread it out onto a baking sheet so it cools more quickly!)

Step 2: Prepare the Veggies & Beans

*While the quinoa cooks, chop the cherry tomatoes, bell pepper, red onion and cilantro.

*If using canned beans and corn, rinse and drain them.

Step 3: Make the Dressing

*In a small bowl, combine the olive oil, lime juice, cumin, chili powder, garlic, salt, and pepper.
